DESCRIPTION | This study-unit introduces the fundamentals in Food Sciences and Nutrition. Areas of study include food composition, food technology, food quality and safety, an introduction to the macro and micro-nutrients and dietary recommendations. Study-Unit Aims: This study-unit aims: -To introduce the fundamentals in Food Science and Nutrition -To expose students to the following subject areas: the macronutrients and micronutrients; processes in food technology; food safety of products; healthy eating guidelines and prevention of chronic disease. Learning Outcomes: 1. Knowledge & Understanding: By the end of the study-unit the student will be able to: - Define the importance of food sciences and nutrition in health and society; - Outline the basic principles of food sciences including food microbiology; - Illustrate the basic elements of macronutrients and micronutrients; - Explore the links between diet and health. 2. Skills: By the end of the study-unit the student will be able to: - Explain the importance of providing safe food products to the consumer - Outline the multiple causes of food spoilage - Associate raw materials with processes in food technology - Define and describe healthy eating recommendations - Demonstrate the links between diet and health, wellbeing and disease prevention Main Text/s and any supplementary readings: - Introducing Food Science.
