DESCRIPTION This study-unit will focus with infections acquired from food, water and the environment. It will describe common disease states transmissed in such manners and also focus on laboratory procedures related to the microbiology of food water and environmental samples as well as practical and theoretical issues to Quality Control in the Microbiology Laboratory and Accreditation.

Learning Objectives

The students will be able to:
1. recognise important food and water borne diseases.
2. understand techniques relevant to food, water and environmental microbiology.
3. appreciate interventions to improve food and water safety including Hazard Analysis of Critical Control Points (HACCP).
4. understand important concepts in laboratory quality assurance and control.
5. be aware of requirements needed for laboratory accreditation including international standards such as ISO14075.
