Attending the ICFM conference at the Westerdijk Institute was an enriching experience that deepened my understanding of fungal spoilage and food safety. Presenting my work on “Antifungal Properties of Lactic Acid Bacteria Isolated from Maltese Sheep Milk and Cheese” opened doors to conversations about how microbial tools can help tackle one of food production’s most persistent threats: fungal spoilage. This conference wasn’t just about microbial threats — it was about connecting local knowledge with global food safety solutions. It reminded me how rooted, regional research can have universal impact when shared in the right community. This event reframed my perspective: fungi are not just challenges; they’re keys to transformation in food science.
