#5 Promoting sustainable gastronomy: Practical tips

#5  Promoting sustainable gastronomy: practical tips

Cooking sustainably at home involves making conscious choices about food sourcing, energy consumption and waste reduction. Sustainable gastronomy focuses on where the food is coming from, how it is grown, how it reaches our markets and eventually ends up on our plates. It takes into consideration the purchase and consumption of adequate amounts of food; it avoids waste and maximises the use of all the edible components; it promotes the careful and correct ways of preserving food at all stages to ensure that when purchased and preserved, food remains fresh and does not go bad.

Sustainable gastronomy acknowledges the importance of the appropriate preservation of leftover meals or the creativity of using leftover food to transform it into alternative, nutritious dishes. Reduce your environmental impact and contribute to a more sustainable lifestyle.

1.    Plan your meals and reduce food waste:

  • Plan meals in advance to avoid impulse purchases and food spoilage.
  • Learn how to use all parts of fruits and vegetables, like broccoli stems or carrot greens, in your cooking.
  • Store food properly to extend its shelf life and prevent spoilage.
  • Compost food scraps and yard waste to create nutrient-rich soil for your garden.

2.  Choose sustainable ingredients:

  • Buy local and seasonal produce to reduce transportation emissions and support local farmers.
  • Consider purchasing organic and ethically produced ingredients when feasible.
  • Reduce meat consumption, as the meat industry has a significant environmental impact.
  • Choose sustainably sourced seafood to minimise overfishing and protect marine ecosystems.

3.  Opt for eco-friendly cookware and appliances:

  • Invest in energy-efficient appliances like induction cooktops, which are more efficient than gas or electric stoves.
  • Use cookware made from sustainable materials like stainless steel, cast iron, or ceramic.
  • Choose reusable food storage containers like glass or stainless steel instead of plastic.
  • Use reusable silicone or beeswax food wraps instead of plastic wrap.

4. Reduce energy consumption:

  • Use the correct size of cookware for your burner to minimise heat waste.
  • Cook in batches to reduce the number of times you need to heat up your oven.
  • Consider using a slow cooker or pressure cooker, which can be more energy-efficient than conventional ovens.
  • Turn off appliances when not in use and unplug them to avoid phantom energy consumption.
